How To Make: Vegan Peanut Butter Cookies

Hello everyone! Today I’m going to show you how to make Vegan Peanut Butter Cookies. This recipe uses all natural ingredients.

INSTRUCTIONS:

You are going to need:

-Flaxseed Meal

-1 Medium-Sized Banana

-Peanut Butter

-Granulated Sugar

-Vanilla Extract

-Almond Milk

-Salt

-Baking Powder

-Baking Soda

-Brown Rice Flour

-Potato Starch Flour

1. First we have to make our ‘fake egg.’ In a bowl, add 1 tablespoon of flaxseed meal.

2. Add 3 tablespoons of water. Let that sit for 10 minutes.

3. Mash up the banana. That should fill ½ a cup.

3. Add that to a large bowl.

4. Spoon in 1 cup of peanut butter…peanut butter…SO GOOD.

5. Add ¾ cup of granulated sugar.

6. And 1 teaspoon of vanilla extract.

7. Mix it well!

8. Add your fake egg. This really has the consistency of a real egg.

9. And 3 tablespoons of milk.

10. Mix to combine.

11. To complete the recipe, add ½ teaspoon of salt…

12. ½ teaspoon of baking soda.

13. ½ teaspoon of baking powder.

14. 1 cup of brown rice flour.

15. And 1 teaspoon of potato starch. (This makes the cookies nice and soft! Which is my favorite type of cookie.)

16. Mix everything together. Make sure by the time you’re done, there are no clumps and everything is well integrated!

17. Using your hands, roll small cookie dough balls. Lay them out on a non-stick baking pan.

18. This should make 16-20 cookies.

19. Bake for 15 minutes at 350 degrees.

20. At around the 5-10 minute mark, take the cookies out and flatten them with a fork. (This gives the cookies a nice look, like something you’d find in a bakery!)

21. Put them back in the oven to cook the remaining 5-10 minutes.

If you’re going on a picnic this spring, bring these along!

They’re a great snack with that hint of banana and peanut butter. Such a yummy combo to have in a cookie!
